Healthy Japanese Fried Rice
Healthy Japanese Fried Rice (Yakimeshi) is a comforting, vegetable-packed dish that turns day-old rice into culinary magic. Enhanced with crisp scallions, fresh ginger, scrambled egg, and a light splash of soy-sesame sauce, it is high in protein, low in fat, and takes under thirty minutes.

Prepare the aromatics and chop vegetables
Finely chop the garlic cloves, grate the fresh ginger, and slice the green scallions (keeping white and green parts separated). Thaw frozen carrots and peas if not already done.

Scramble the eggs in the wok
Heat a large wok or non-stick skillet over medium-high heat. Drizzle half a tablespoon of vegetable oil. Pour in the beaten eggs, scramble quickly until soft curds form, then immediately transfer back to the bowl and set aside.
Sauté aromatics and fry the rice
Add another tablespoon of oil to the wok. Toss in garlic, ginger, and the white parts of the green scallions, stir-frying for 30 seconds until fragrant. Increase heat to high, add the cold rice, and break up any clumps with a spatula. Fry, tossing constantly, for 3-4 minutes.
Incorporate sauce, veggies, and egg
Drizzle the soy sauce and sesame oil around the edges of the wok so it caramelizes slightly as it runs down. Stir-fry to coat the rice. Fold in the peas, carrots, scrambled egg, white pepper, and remaining green scallions. Toss for another minute until everything is steaming. Serve hot!
